"I Will Survive" Sweet Disco Chili 

On a recent Saturday looking for something to eat for lunch , I decided to throw together something I used to make during my time in the Navy. Everyone loved my Chili because I always threw something in there that was unexpected, So I put on my Disco Spotify playlist and was inspired by one of the biggest Disco anthems ever recorded. It was sooooooo good I decided to share it with you.

When the mirror ball spins and the night gets long, you need a dish that can keep up with your groove. "I Will Survive" Disco Chili was born for the spotlight—rich, spicy, and just a little bit sweet, with bold peppers, saucy attitude, and a sassy kick of vinegar. Whether you're dancing through heartbreak or heating up the party, this chili's got your back. Serve it hot, top it with cheese, and always—always—have a slice of toasted buttered Cuban bread on the side. Because in this kitchen, survival tastes like a celebration.

A bold, flavorful chili that’s ready to dance right off your plate.

Ingredients

  • 1 lb ground beef

  • 1/2 can of sweet corn

  • 2 whole onions, diced

  • 2 cans dark red kidney beans, drained

  • 1 can black beans, drained

  • 1/2 red bell pepper, diced

  • 1 banana pepper, diced

  • 2 cans tomato sauce

  • 1/2 can tomato paste

  • 1/2 cup ketchup

  • 2 cups water

  • 2 oz white vinegar

  • 1/2 packet mild chili powder (or to taste)

  • 1 tsp cumin powder

  • 1 tsp Sazón Completa

  • 1 tsp minced garlic

  • 1/2 tsp garlic powder

  • Light cooking oil

  • Shredded cheddar cheese (for serving)

  • Lightly buttered Cuban bread (for serving)

  • 1tsp Sour Cream ( optional)


Instructions

  1. Brown the Beef: Don't be Afraid or Petrified to over-brown ( but don't burn) 
    In a large skillet over medium-high heat, brown the ground beef with diced onions until well-cooked and caramelized. Drain excess fat if needed.

  2. Sauté the Peppers: 
    In a separate pan, heat a small amount of oil. Sauté the diced red bell pepper, banana pepper, and minced garlic for about 3 minutes until slightly softened and aromatic.

  3. Build the Disco Magic: Turn up the volume on your favorite Disco track
    In a large pot over low heat, combine the browned beef , sweet corn ( optional) sautéed peppers. Add tomato sauce, tomato paste, ketchup, chili powder, cumin, Sazón Completa, garlic powder, and white vinegar. Stir well. Sip a little Proseco while you stir.

  4. Add the Beans & Water: Once you go Red and Black , you won't go back
    Gently fold in the kidney and black beans. Add 2 cups of water, stir, and bring to a light boil.

  5. Simmer to the Beat: It's getting Hot in Here 
    Once boiling lightly, reduce the heat and let the chili simmer for 10 minutes, stirring occasionally. Let those flavors dance and mingle.

  6. Serve with Style: Spin your partner Twice , dip and sit at the dining room table
    Spoon into bowls, top with shredded cheddar cheese, and serve with warm, lightly buttered Cuban bread.
